General features


After the break, the egg product will be directed to the storage tanks for their standardization and cooling.

After being stored and cooled to 4.5ºC, the product will be sent to the EDELSTAHL pasteurization system with a capacity of 100 to 10,000 l / h and 4.5ºC, where it will be preheated in the regeneration section until the temperature approximately 50ºC, and directed to the homogenizer.

After the regeneration section the product is heated to 63.5 ° C by countercurrent circulation of hot water. For the calculation of this pasteurizer we respect some parameters in order to maximize system performance and maintenance of product quality, such as temperature differential never greater than 1ºC and speeds between plates not exceeding 0.28 m / s.

The pasteurization skid includes the hot water generation system composed of tubular heat exchanger for water heating, centrifugal pump monoblock for hot water circulation as well as accessories for feeding and steam control.

After the heating section, the product will be sent to the sanitary tubular retarder (retarding capacity: 210 seconds), manufactured with stainless steel tubes and thermally insulated.

At the desired pasteurisation temperature, the product will be cooled by a regenerative effect to the approximate temperature of 20 ° C, then cooled to 4,5 ° C by back flow of ice water.
